Baby Leek Salad

Our baby leeks are great for starting soups, but here is a nice salad that really showcases their tender flavor.

1 bunch of leeks
1/4 cup of olive oil
1 tablespoon of vinegar
1 teaspoon dijon mustard
salt and pepper
  1. Boil leeks for about 8 minutes. Drain and cool.
  2. Make vinaigrette by shaking all the other ingredients together in a small jar.
  3. Toss all ingredients together.
