Sesame Sesame Green Beans

28 Jun

Once you develop a love for greens, you will have a “go-to” recipe for how you prepare your kale and chard. When I worked at Camp Celo in Western North Carolina, the chef would always “go-to” this recipe whenever Green Beans were on the menu. They go great with his Sweet Potato Biscuits.

  • 0.75 lb of green beans
  • 1 teaspoon of soy sauce
  • 1 teaspoon of sesame oil
  • 2 teaspoons of sesame seeds
  • 1 teaspoon of ginger, well minced (very optional)

Steam the green beans for 4 or 5 minutes, but NO longer. They should be bright green. Rinse them with cold water if you’ve overcooked them. Toss the beans in a bowl with the soy sauce, sesame oil, and sesame seeds. For a more complex flavor, toast the sesame seeds in a dry pan over medium heat for 2-3 minutes, and then add them to the green beans.  Keep an eye on your seeds and stir frequently because they can burn easily. Serve chilled, warm, or on a picnic.
