World’s Best Green Beans

2lbs green beans, ends trimmed
2 T extra virgin olive oil
coarse salt or kosher salt

Preheat oven to 500 degrees. Arrange beans in single layer on pan
Drizzle with oil, roll til even coated.
Roast for 15 mins, until til beans are well browned. Shake pan for even cooking. Transfer bean to serving bowl and sprinkle with salt. Serve immediately.

Cucumber Raita

Dear Fairview Friends,

Sneak Peek: nectarines, carrots, strawberries, lettuce, green beans, cilantro, tomatoes, and cucumbers. Large share also gets avocados.

Cucumber Yogurt Sauce

Many people serve this  yogurt dip with Indian food, but I also like to eat it for breakfast on hot mornings.

3/4 cup plain low-fat yogurt
1/2 teaspoon of cumin
Juice of 1/2 lemon
1 cucumber, peeled and chopped

Mix first three ingredients together, then add the cucumbers.

Enjoy!

Please let Melissa know if you are interested. This is our biggest event of the year and I would love some help to make this a truly excellent event.

This week’s Harvest contains nectarines, carrots, strawberries, lettuce, radishes or arugula, green beans, fresh herbs (basil or parsley), and tomatoes.

Recipes for Green Beans: Frijole Mole

This recipe is from an inspirational book: Animal, Vegetable, Miracle by Barbara Kingsolver. You can eat this dip with crackers or in wraps. When I made this recipe, I didn’t let the beans get very tender, so the end product was a bit tough. Cook the beans well!

  1. Steam green beans until tender.
  2. Saute onions over medium heat in oil until transparent.
  3. Combine beans, cooked onions, eggs, basil, and lemon juice in food processor and blend into coarse paste.
  4. Remove puree to a bowl and combine with enough mayo or yogurt to hold mixture together.
  5. Add salt and pepper to taste.
  6. Tip:You can steam the eggs to hard boil them, same as you would anything else. They take about 12 minutes to cook. Much easier to do and eggs peel nicely.

Tongue of Fire Beans have arrived! You can use these creamy and plump beans in all your favorite bean dishes… and in half the cooking time. You don’t need to soak them in water and they only need 25 minutes to cook! See the recipe below.

Tongue of Fire Beans

How to Cook Tongue of Fire Beans

Put beans in a pot of water with fresh vegetables including leeks, a chopped tomato, potato, garlic, onions, and fresh herbs (such as rosemary, thyme, and oregano or cilantro and parsley) Add olive oil and black pepper, but NO SALT. Salt will make the beans tough.

Bring to a boil and simmer for 25 minutes. Once cooked, add a squeeze of acid, such as lemon juice or splash of vinegar. If you really want them to absorb the flavor, turn off the heat, and let them sit on the stove for another hour.

Here are some cooking ideas:

  • Make a bean salad with fresh vegetables and herbs.
  • Crush them up and put them on bruschetta.
  • Cook with clams and chorizo and serve over pasta.
  • Or, eat them straight out of the pot with their broth.

Incredible Cilantro Salad Dressing

What makes this salad dressing so wonderful? It’s hard to say. But soon enough you’ll be putting it onto pasta salads, bean dishes, quinoa, and grilled chicken.

Ingredients

  • 1/2 cup of olive oil
  • 1/3 cup of balsamic,  apple cider, or white vinegar
  • 1 bunch of cilantro
  • 2 green onions (or bunch onion)
  • 1 teaspoon of honey
  • 1 Tablespoon of dijon mustard
  • dash of salt
  • dash of pepper

Blend until smooth. You may want to add 1 Tablespoon of water to make the dressing more liquid.
