Pumpkins you can eat

Greetings.

The sneak peek this week is zucchini, lettuce, tomatoes, french fillet beans, basil, peppers, tongue of fire bean (dry), and DELICATA SQUASH.

Delicata Squash is a wonderfully versatile pumpkin. Here are some suggestions for how to prepare it:

GLAZE IT. This recipe comes from one of my favorite cookbooks  The Herbfarm Cookbook by Jerry Traunfeld. It is Roasted Roasted Delicata Squash with Rosemary, Sage, and Cider glaze.

STUFF IT. Here is a recipe that uses a pasta shape called orzo, but you could also stuff it with quinoa or rice. Delicata Squash Stuffed with Orzo in a Sage, Brown Butter Sauce.

SOUP IT . In the mood for soup? Try this recipe for Autumn Minestrone Soup. by the Moosewood Collective. Pumpkin adds so much flavor to this soup.
